These lovely filo triangles filled with spinach and goat’s cheese are great as snack at a party, to share at apéro time or as a side dish. The filo pastry isn’t as greasy as puff pastry, which makes that the triangles are still okay in calories.
Ingredients
For 10 servings
- 5 or 10 sheets of filo pastry – depends if it’s formed square or rectangluar
- 250 gr fresh spinach
- 150 gr soft goat’s cheese
- 150 gr sundried tomatoes
- 2 cloves of garlic, crushed
- butter
Preparation
Preheat oven at 180 degrees.
Filling
For the filling, first heat a casserole with a bit of oil. Add the garlic and spinach. Wait for it to shrink.
Then cut the spinach in small pieces and put them in a bowl. Cut the sundried tomatoes and goat’s cheese and mix through the spinach.
Triangles
Melt the butter in a casserole. Then take the filo pastry. If you have rectangular filo pastry, with big sheets, then cut each sheet in two. If you have squares, then take one. Add a bit of filling on the left side, in a triangle form. Fold the other side on top. Grease the top with a little bit of melted butter. Roll the open edges to close them. Repeat with all the sheets.
Bake for approximately 20 minutes, until goldenbrown.
